Story

Carmo Estate has been producing high-quality coffee for 150 years. This lot was produced using the "Borrem Natural" process, which was developed in collaboration with Dr. Flavio Borrem, a leading coffee researcher in Brazil.

About the Borem Natural Process

In order to improve the harvesting and drying processes, which are important in coffee production, producer Tulio sought guidance from Dr. Flavio Borrem, a leading scientific coffee researcher in Brazil, and this production processing method was created as a result of their efforts.

- After careful harvesting and sorting, the coffee cherries are dried on the patio.
・During the four days of drying, the coffee cherries are not touched at all and are spread thinly. It is common to stir them at the beginning of the drying process when they are particularly moist, but the reason the coffee cherries are not touched at all during drying is to avoid damaging them as much as possible. This results in a coffee with a unique flavor reminiscent of many fruits, such as tropical fruits.

Expiration Date

Best enjoyed within three months of the roast date. Store in a cool, dry place away from direct sunlight, and consume promptly.

The bag may appear puffed due to gases released by the coffee beans, but this does not affect quality—enjoy as is.
