Flavor Profile

This coffee offers a refined and deep impression, with the gentle citrus sweetness reminiscent of orange cream layered with a subtle herbal note. As it cools, a sweetness like sweet chocolate and brown sugar spreads, and a creamy texture smoothly envelops the whole experience. It's a cup with an excellent balance of brightness and sweetness, with a pleasant, lingering finish.

Story

Finca Rosma is a prestigious farm located in San Pedro Necta, Huehuetenango, Guatemala. The Morales family acquired the farm in 1963, and currently, Fredy Morales is dedicated to improving quality. The farm's name, derived from his wife Rosemary, reflects the family's history. Utilizing the high altitude, cool environment, and abundant spring water, they meticulously carry out washed processing. ROSMARAGO, centered around Pacamara and Maragogype, symbolizes Rosma's unique character. Known for its clear acidity, sweetness, and vibrant fruitiness, the farm has a proven track record at COE.

Best Before

Best enjoyed within three months of the roast date. Store in a cool, dry place away from direct sunlight, and consume promptly.

The bag may appear puffed due to gases released by the coffee beans, but this does not affect quality—enjoy as is.

This coffee is from Finca Rosma Farm in Guatemala, which our head roaster, Maeda, visited last April.

Finca Rosma Farm is located in Huehuetenango, a famous coffee producing region in Guatemala.
In 1963, Alejandro Morales, father of current owner and dentist Freddy Morales, purchased the land where coffee trees were originally planted. Morales inherited the property in 1980, and his passion for coffee led him to start full-scale coffee production.

When he inherited the farm, there was no road leading to it, so the only way to get there was by donkey, a distance that took an hour to walk.
He then took over in the early 1990s and worked with the nearby farming community to build roads that not only improved access to the farms but also made life easier for the people living in the surrounding areas today.
In addition, to produce high-quality coffee, we have purchased the rights to a water source approximately 5km away, allowing us to use clean water for production processing.

We cup over 1,000 samples a year and conduct daily research into processes and cultivation in our pursuit of high-quality coffee.

Morales is also working with smallholder farmers in the area on a coffee quality improvement project.
Their goal is to spread the excellence of coffee from the Huehuetenango region to the world. To that end, they say that continuing to produce together with their fellow members is a major motivation. "The coffee produced not only on our farm, but also on the small farms around us, is part of Losmah," Morales' sons Alejandro and Freddy said during a cupping session in November 2024, conveying their strong desire to improve the quality of the entire region.
Their dedication and passion is evident in their constant pursuit of producing high-quality coffee, and that passion is clearly evident in each and every cup of coffee.

This is what it was like when we held a cupping session with REC COFFEE.
Not only were we able to hear such valuable stories, but it was also a truly wonderful time to actually exchange opinions while cupping with the producers! The two of them said they love sweet things. Despite their limited schedule, they also enjoyed cakes from "SAISON DES RÉCOLTES," a patisserie brand from REC COFFEE!
