Story
This is El Burro Farm, which has become a familiar sight in the SLS series.
This farm has a history of over 100 years and is a highly accomplished producer, having won the Best of Panama competition two years in a row. It is located at an altitude of 1,575-1,600m. The wind and temperature are variable, and the average rainfall during the rainy season is very high, at 3,200mm. The overall temperature is low, and the low temperatures persist even during the dry season, allowing the coffee cherries to ripen slowly.
This batch represents an even greater evolution of their signature Anaerobic Slow Dry.
As a new facility, we have created a room dedicated to drying in a darkroom environment, where we control humidity and air circulation to carry out an even more precise process (Dark Room Dried).
The impression is reminiscent of tropical fruit and the moderate fermentation gives it a wine-like aftertaste.
