Sweet, juicy fruit notes reminiscent of mandarin oranges and tangerine juice make an immediate impression. These are layered with the bright, refreshing character of lychee, bringing a rich sweetness that fills the palate. A dense, syrup-like sweetness and silky, almost coating texture add to its appeal. Lively sweet-and-tart fruit flavors carry through to a long, pleasant finish, making this a deeply satisfying cup.

El Vergel Estate is located in Fresno, Tolima, Colombia. Its story began in 1995, when the Bayter family started growing avocados. After plant disease caused prices to fall, the family’s mother, Marta, began transitioning to coffee cultivation around 2010. Her sons, Shady and Elias, explored a wider range of varieties and experimented with fermentation techniques, transforming the family farm into an innovative producer of specialty coffee.
In 2019, they established FOREST COFFEE to connect producers with roasters around the world. They continue to explore diverse coffee varieties and develop their own processing techniques.
This lot, named “MANGO,” is a product of that spirit of exploration. It builds on a honey-process approach, incorporating yeast and two stages of fermentation to develop its distinctive character.

A Note from the Online Shop Manager Juicy fruit flavors that capture the character of Colombian coffee, paired with candy-like sweetness. A great choice for anyone who enjoys bright, juicy Colombian coffees. It’s lovely on its own and would also pair well with light, crisp cookies. |

FOREST COFFEE began in 1995 when avocado cultivation began at our own farm, El Vergel Farm.
Then, in 2010, producers Elias and Shadi's mother, Martha, began their own venture into coffee cultivation.
As the couple's interest in coffee grew, they dedicated themselves to improving their experimental knowledge of pulping and various fermentation methods, and in 2015 they successfully cultivated their first variety.
In 2019, FOREST COFFEE was established with the theme and vision of "RE FOREST (reclaiming lost forests)."

El Vergel farm grows approximately 28 different coffee varieties on about half of its vast 300 hectares of land.
Typically, most coffee farms in Colombia do not plant "shade trees" in order to increase yields or expand the area of land under cultivation, but El Vergel Farm has planted shade trees and cultivates coffee as part of a voluntary effort to preserve the natural forest for the sake of nature conservation.
The cultivation methods at El Vergel Farm are more similar to those found in farms in Central America, Costa Rica, and Panama.
He always approaches coffee from a research and experimental perspective, and as a pioneer of innovation and quality in Colombian coffee, he leads FOREST COFFEE, a network of 250 coffee producers.

They specialize in the fermentation process, and at their washing station in the center of the farm, they use a dedicated app to precisely manage the process and carry out production processing.
Through countless research and experimentation, we have developed the ability to use bacteria, yeasts and controlled fermentation to bring coffee to unprecedented levels of excellence.
We are also fascinated by innovative initiatives that are changing our relationships with producers for the better.
