Flavor Profile
Rich and ripe fruit flavors reminiscent of mango unfold on the palate, while a bright, vivid acidity reminiscent of passion fruit adds depth and dimension to the cup.
The sweetness is exceptionally rich, spreading smoothly across the palate with a syrup-like texture and leading to a bright, approachable impression reminiscent of fruit candy.
The tropical aromas derived from fermentation are distinct, yet the coffee retains the clean character typical of a washed process. The result is a bright and transparent cup that never feels overly heavy.
As the temperature changes, the sweetness of mango gradually blends with a candy-like finish, leaving a bright and juicy impression that lingers to the very end.

Story
Granja Paraíso 92 is an innovative specialty coffee project led by Wilton Benitez in Piendamó, Cauca, Colombia. A diverse range of coffee varieties are cultivated on the farm, with every stage—from cultivation and fermentation to drying—carefully controlled to bring out the unique character of each variety.
P-02 Red Bourbon is made from Red Bourbon cherries grown at La Macarena farm. After harvest, the cherries undergo multiple stages of selection before being sanitized with ozonated water and ultraviolet light. They are then fermented whole cherry for 48 hours.
After pulping, a second stage of fermentation takes place for 68 hours using the Double Anaerobic Washed process. During this stage, the mucilage and fruit juice produced during the initial cherry fermentation are reintroduced to the coffee.
Wilton's scientific approach, combined with his deep understanding of the coffee itself, results in a precise and complex cup that brings together the vibrant character of fermentation with the clean, transparent qualities of a washed coffee.
