Story

HiU COFFEE is the collective brand name of farms operated by Mr. Graciano Cruz.

At Emporio Estate in the Boquete region of Panama, coffee trees are planted alongside orange and various citrus trees, following the local tradition of coffee cultivation that dates back over 70 years.

Green Tip Geisha is planted across three different areas, and this lot was harvested from the largest section, the Popo plot.
This plot lies in a valley surrounded by towering ancient rainforest trees said to be over 1,000 years old, creating a forest environment reminiscent of Ethiopia’s native coffee forests.

After harvesting, the coffee cherries are sealed in plastic bags and undergo 24 hours of anaerobic fermentation in a high-humidity environment at 20°C,
followed by a slow drying process lasting 21 days.
