Fukuoka’s Edible Café Latte
A new Japanese confection created to make coffee more approachable—as a way to discover the joy of coffee and as a souvenir from Fukuoka.
Our concept is an “edible café latte” that you can enjoy anytime, anywhere. This unique monaka features two layers of filling inspired by the flavors of a café latte.

Fukuoka’s Edible Café Latte Souvenir
Latte Monaka was created from the idea of making a souvenir that you can casually hand to someone and say, “I went to Fukuoka.”
Coffee is an essential part of REC COFFEE, but choosing coffee as a souvenir can sometimes feel like a bit of a hurdle.
So we set out to create something that could be enjoyed not only by coffee lovers, but also by people who don’t usually drink coffee.
We eventually found our answer in wagashi, traditional Japanese confectionery that embodies a distinctly Japanese character.
We challenged ourselves to express the appeal of coffee through wagashi, creating a souvenir that visitors to Fukuoka could enjoy and share.
Developed Together with Fukuoka Wagashi Shop “Tokinose”
Latte Monaka was jointly developed with Tokinose, a wagashi shop based in Fukuoka.
While valuing the traditions of Japanese confectionery, Tokinose also actively explores new ways of expressing wagashi.
They shared REC COFFEE’s vision of expressing the deliciousness of coffee through Japanese confectionery, and together we refined the product through repeated trials.
The combination of a coffee specialist’s perspective and the skills of a wagashi artisan gave Latte Monaka its unique flavor and form.
Creating a Flavor Closer to a Café Latte
To recreate the taste of REC COFFEE’s café latte, we divided the filling into two layers: coffee and milk.
The coffee filling is made with 100% REC COFFEE specialty coffee.
To create the perfect coffee filling to complement the milk filling, we tested numerous coffee varieties and roast levels. We also incorporated coffee into the monaka shell itself, so that the coffee flavor comes through clearly.
With two layers of filling, the flavor changes depending on how you bite into it.
We Paid Attention to the Shape, Too
Unlike traditional monaka, Latte Monaka has a distinctive stick shape.
Our goal was to create a Japanese confection that could be enjoyed easily in any setting.
Whether you want to take a break with your coffee or enjoy a quick moment between work and household tasks, its shape makes it easy to eat.
It is also easy to carry and designed to keep your hands clean.
Enjoy a relaxed snack time together with your coffee.
A Fortuitous Encounter with the Packaging Material
While developing the packaging, we were introduced to a new material: a 100% recycled paper stock called “Café Latte.”
The packaging began with this serendipitous encounter with a paper named “Café Latte.”
The two-tone colors represent the two layers of coffee and milk, while the design centers around the themes of Fukuoka and coffee.
Every detail was carefully considered to create packaging that feels uniquely Latte Monaka.
