Rosa Dimas Funes, who runs the farm, is a second-generation producer who grew up surrounded by coffee work—from harvesting and drying to processing—and inherited the farm from her father. Today, she works on the 8-hectare farm alongside her wife and four children.\u003cbr\u003eWe are pleased to introduce this honey-processed Pacas variety. Only fully ripe red cherries are carefully harvested by a team of 20 pickers and depulped using an eco-friendly mechanical mill. The beans are then dried slowly in a solar dryer for 25–32 days without a fermentation stage.
